Indian coriander has a delightful green color,unique football shape and a bright citrusy flavour. Coriander is grown in Rajasthan and Gujarat State in India and botanical name is Coriandrum sativum. All parts of the plant are edible, but the fresh leaves and the dried seeds are the parts most traditionally used in cooking. Coriander is commonly used both as whole dried seeds and in powder form. It is widely flavoring agent in food industry and suitable to add pleasant aroma and flavor to food items. Oleoresin also extracted from the coriander seeds. The oleoresin is in addition employed for seasoning beverages, pickles, sweets and other numerous delicacies.
